Ingredients
- 1 lb boneless skinless chicken thighs
- ½ cup plain Greek yogurt
- 2 Tbsp lemon juice
- 2 Tbsp olive oil
- 5 garlic cloves, minced
- 1 Tbsp smoked paprika
- 1 Tbsp dried oregano
- 1 tsp salt
- ½ tsp cumin
- ½ tsp black pepper
- ¼ tsp red pepper flakes
- White rice for serving
- 2 Persian cucumbers, sliced & quartered
- 1 large avocado, sliced
- 2 Tbsp fresh chives, sliced
- 2 Tbsp fresh dill, chopped
- Salt & black pepper to taste
- 1 cup plain Greek yogurt (for tzatziki)
- 2 garlic cloves minced (for tzatziki)
- 2 Tbsp lemon juice (for tzatziki)
- 1 Tbsp olive oil (for tzatziki)
- ½ tsp salt (for tzatziki)
- Cracked black pepper, to taste (for tzatziki)
Instructions
- In a mixing bowl, combine Greek yogurt, garlic, lemon juice, olive oil, smoked paprika, oregano, salt, cumin, and black pepper. Add chicken thighs and coat well; marinate for 30 minutes to 1 hour.
- For the tzatziki, mix Greek yogurt with grated cucumber (drained), garlic, dill, lemon juice, olive oil, salt, and pepper; refrigerate.
- Preheat oven to 400°F (200°C) and bake marinated chicken in a sprayed baking dish for about 20-22 minutes until cooked through.
- For the cucumber salad, combine sliced cucumbers and avocado with chives and dill; season with lemon juice, salt, and pepper.
- Assemble bowls starting with rice at the base followed by chicken pieces, cucumber salad, and tzatziki sauce on top.
