  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil

Instructions

  1. Cook the Rice: In a large pot, bring water or chicken broth to a boil. Add rice, reduce heat to low, cover, and simmer for about 18 minutes until liquid is absorbed. Fluff with a fork.
  2. Prepare the Meat: Heat olive oil in a skillet over medium heat. Add ground beef or turkey; cook until browned.
  3. Season the Meat: Sprinkle taco seasoning over the meat; stir well. Add about ¼ cup of water if needed, simmer for another 5 minutes.
  4. Assemble Your Bowl: Layer cooked rice in serving bowls, then add seasoned meat and top with black beans, corn, diced tomatoes, lettuce, cheese, and salsa.
