Ingredients
- 2 medium sweet potatoes (cubed)
- 1 red bell pepper (diced)
- 1 medium onion (chopped)
- 1 lb ground turkey sausage
- 8 eggs
- 1/3 cup almond milk
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium-high heat, cook cubed sweet potatoes for about 8 minutes until almost tender. Add onion and red bell pepper; season with salt and pepper and cook for another 3 minutes. Transfer to a casserole dish.
- In the same skillet, brown the ground turkey sausage for about 5 minutes. Crumble as it cooks and add to the casserole dish.
- Whisk together eggs, almond milk, thyme, salt, and pepper in a mixing bowl. Pour over the sweet potato and sausage mixture; stir gently to combine.
- Cover with foil and bake for 20 minutes. Remove foil and bake uncovered for an additional 15 minutes until golden brown. Let rest for 5 minutes before serving.
