  • ½ cup unsalted butter (melted)
  • ¾ cup sour cream
  • ½ cup milk
  • 2 large eggs
  • 3 Tbsp lemon juice
  • 2 Tbsp lemon zest
  • 1 tsp vanilla extract
  • 1½ cups diced fresh strawberries

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a nonstick loaf pan.
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, mix melted butter, sour cream, milk, eggs, lemon juice, lemon zest, and vanilla until well combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just mixed.
  5. Fold in diced strawberries carefully to avoid overmixing.
  6. Transfer batter to the prepared loaf pan and smooth the top.
  7. Bake for 65-70 minutes or until a toothpick inserted comes out mostly clean.
  8. Allow cooling on a wire rack before slicing.
