  • 2 cups fresh spinach (chopped)
  • 1 garlic clove (minced)
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • ½ cup ricotta cheese
  • ¼ cup shredded mozzarella
  • 1 egg (beaten) for egg wash

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. Sauté chopped spinach and minced garlic in a skillet over medium heat for about 2 minutes until wilted. Remove from heat and let cool.
  3. Roll out the thawed puff pastry on a floured surface and cut into desired shapes.
  4. In the center of each pastry shape, place 1 tablespoon of ricotta cheese followed by 1–2 tablespoons of the cooled spinach mixture and shredded mozzarella.
  5. Brush the tops with beaten egg for a golden finish.
  6. Bake for 18–20 minutes or until golden brown.
