  • 11/2 tbsp olive oil
  • 2 tsp minced garlic
  • 4 cups fresh spinach leaves
  • 12 oz skim-milk ricotta cheese
  • 1 cup shredded skim-milk mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • Fresh basil, kosher salt, black pepper
  • 11/4 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F. Cook the pasta al dente according to package directions, drain, and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Add minced garlic, cooking until fragrant (about 1–2 minutes). Stir in spinach and cook until wilted (about 3–4 minutes). Remove from heat and let cool slightly.
  3. In a mixing bowl, combine sautéed spinach with ricotta, mozzarella, Parmesan, egg, basil, salt, and pepper; mix well.
  4. Pour ½ cup marinara sauce into an 8-inch baking dish. Stuff each cooked shell generously with the filling and arrange them in the dish.
  5. Top with remaining marinara sauce, cover with foil, and bake for 25 minutes. Remove foil and bake an additional 10–15 minutes until golden brown.
