  • 6 slices Chicken bacon, chopped
  • 1 small Onion, finely diced
  • 45 pieces Fresh jalapeños, diced (seeds removed for less heat)
  • 3 cloves Garlic, minced
  • 4 cups Chicken broth
  • 1 8 oz Cream cheese, softened and cubed
  • 1 cup Heavy cream
  • 2 cups Shredded cheddar cheese
  • 1/2 teaspoon Smoked paprika
  • Salt and pepper, to taste
  • 2 tablespoons Fresh chives or green onions (for garnish)
  • 8 slices Bread (sourdough or your favorite)
  • 2 cups Shredded cheddar or a cheese blend
  • 4 tablespoons Butter, softened

Instructions

  1. In a large pot, cook the chopped chicken bacon until crispy. Remove and set aside.
  2. Sauté diced onion and jalapeños in the same pot for 3-5 minutes. Add minced garlic and cook for an additional minute.
  3. Pour in chicken broth, scrape any brown bits, and bring to a simmer.
  4. Stir in cream cheese until melted, then add heavy cream, shredded cheddar, and smoked paprika until smooth.
  5. Season with salt and pepper; let simmer uncovered for 10-15 minutes.
  6. For the dippers, butter one side of each slice of bread, sandwich cheese between two slices, and grill on medium heat until golden brown.
  7. Serve the soup topped with crispy chicken bacon bits and chives alongside grilled cheese dippers.
