  • 1 1/2 cups granulated sugar (350g)
  • 1 1/2 sticks unsalted butter, room temperature (170g)
  • 1/2 tsp sea salt (3g)
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1/2 cup sourdough discard (125g)
  • 1 tsp baking soda (6g)
  • 1 1/2 tsp cream of tartar (9g)
  • 3 cups all-purpose flour (360g)
  • 1/2 cup granulated sugar (for cinnamon sugar coating)
  • 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together unsalted butter and granulated sugar until light and fluffy. Add the eggs and sourdough discard, mixing until well combined.
  3. In another bowl, whisk together all-purpose flour, baking soda, cream of tartar, and sea salt. Gradually add this mixture to the wet ingredients until just combined.
  4. Prepare the cinnamon sugar by mixing granulated sugar with ground cinnamon in a small bowl.
  5. Scoop out dough portions and roll into balls, then coat each ball in the cinnamon sugar mixture.
  6. Place on the prepared baking sheet with space between each cookie and bake for about 10 minutes or until edges are lightly golden. Cool slightly before transferring to a wire rack.
