  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1 cup confectioners' sugar
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together 2 1/2 cups flour, 1/2 teaspoon baking powder, and 1/2 teaspoon salt.
  3. In a large mixing bowl, cream together 1 cup softened butter and 1 cup granulated sugar until fluffy.
  4. Beat in 1 egg and 1 teaspoon vanilla until combined.
  5. Gradually add the dry ingredients to the wet mixture until combined into dough.
  6. For the filling, mix 1/2 cup brown sugar with 2 tablespoons ground cinnamon in a small bowl.
  7. Roll out the dough on a floured surface to about 1/4 inch thick, sprinkle with cinnamon filling, roll into a log, and chill for at least 30 minutes.
  8. Slice the log into circles and bake for 10-12 minutes or until edges are lightly golden.
  9. Prepare icing by whisking together 1 cup confectioners' sugar with milk and vanilla until smooth, then drizzle over cooled cookies.
