- 4 tablespoons unsalted butter (softened)
- 2 tablespoons basil pesto
- 2 tablespoons light olive oil
- 4 4-ounce fillets salmon (skin removed)
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- Juice from ½ of a lemon
Instructions
- In a mixing bowl, combine 4 tablespoons of softened unsalted butter with 2 tablespoons of basil pesto until well blended. Set aside.
- Pat 4 salmon fillets dry and season both sides with 1 teaspoon of kosher salt and ½ teaspoon of black pepper.
- Heat 2 tablespoons of light olive oil in a skillet over medium-high heat. Once hot, add the salmon (skin-side down if applicable) and cook for about 4-5 minutes on each side until golden brown and cooked through.
- Remove the salmon from the skillet and generously top each fillet with the prepared pesto butter while still hot. Squeeze fresh lemon juice over the top before serving.
