Ingredients

  • 4 tablespoons unsalted butter (softened)
  • 2 tablespoons basil pesto
  • 2 tablespoons light olive oil
  • 4 4-ounce fillets salmon (skin removed)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • Juice from ½ of a lemon

Instructions

  1. In a mixing bowl, combine 4 tablespoons of softened unsalted butter with 2 tablespoons of basil pesto until well blended. Set aside.
  2. Pat 4 salmon fillets dry and season both sides with 1 teaspoon of kosher salt and ½ teaspoon of black pepper.
  3. Heat 2 tablespoons of light olive oil in a skillet over medium-high heat. Once hot, add the salmon (skin-side down if applicable) and cook for about 4-5 minutes on each side until golden brown and cooked through.
  4. Remove the salmon from the skillet and generously top each fillet with the prepared pesto butter while still hot. Squeeze fresh lemon juice over the top before serving.
