  • 1 pound chicken or turkey sausage (sliced or crumbled)
  • 1 cup long-grain white or brown rice
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 12 medium bell peppers (chopped)
  • 1 cup tomato sauce or diced tomatoes
  • 2 cups chicken broth
  • 12 tablespoons olive oil
  • Dried basil
  • Dried oregano
  • Crushed red pepper flakes
  • Salt
  • Black pepper

Instructions

  1. Prepare the ingredients by chopping the onion, garlic, and bell peppers. Slice or crumble the sausage.
  2. Heat olive oil in a large skillet over medium heat. Add the sausage and cook until browned (about 5-7 minutes). Remove from skillet.
  3. In the same skillet, sauté the onion, garlic, and bell peppers for about 4-5 minutes until softened.
  4. Return the sausage to the skillet and stir in rice, tomatoes, chicken broth, basil, oregano, and red pepper flakes. Bring to a simmer.
  5. Cover and reduce heat to low. Cook for about 20 minutes until rice is tender.
  6. Let rest covered for a few minutes before fluffing with a fork. Adjust seasoning if needed.
