Ingredients
- 1 pound chicken or turkey sausage (sliced or crumbled)
- 1 cup long-grain white or brown rice
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 1–2 medium bell peppers (chopped)
- 1 cup tomato sauce or diced tomatoes
- 2 cups chicken broth
- 1–2 tablespoons olive oil
- Dried basil
- Dried oregano
- Crushed red pepper flakes
- Salt
- Black pepper
Instructions
- Prepare the ingredients by chopping the onion, garlic, and bell peppers. Slice or crumble the sausage.
- Heat olive oil in a large skillet over medium heat. Add the sausage and cook until browned (about 5-7 minutes). Remove from skillet.
- In the same skillet, sauté the onion, garlic, and bell peppers for about 4-5 minutes until softened.
- Return the sausage to the skillet and stir in rice, tomatoes, chicken broth, basil, oregano, and red pepper flakes. Bring to a simmer.
- Cover and reduce heat to low. Cook for about 20 minutes until rice is tender.
- Let rest covered for a few minutes before fluffing with a fork. Adjust seasoning if needed.
