  • 1 pound ground beef
  • 1/4 cup + 2 tablespoons sliced green onions
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons fruit juice (to replace mirin)
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 4 cups coleslaw mix

Instructions

  1. Cook the Lo Mein noodles according to package instructions, drain, and set aside.
  2. In a large skillet over medium heat, add peanut oil and brown the ground beef with sliced green onions until cooked through.
  3. In a bowl, whisk together chicken broth, fruit juice, dark soy sauce, garlic, ginger, sesame oil, and sriracha.
  4. Add the cooked noodles and coleslaw mix to the skillet with beef; pour in the sauce and toss everything together for about 2–3 minutes until well combined and heated through.
