  • 1/2 lb. penne pasta
  • 1 lb. chicken breast (cut into cubes)
  • 1 small yellow onion (diced)
  • 1 can diced tomatoes (15 oz.)
  • 3 cloves garlic (minced)
  • 2 cups fresh spinach (chopped)
  • 2 3/4 cups chicken broth
  • 1/2 tbsp olive oil
  • 1/2 tbsp butter
  • 4 oz. cream cheese
  • 1/2 cup mozzarella cheese (grated)
  • 1/3 cup parmesan cheese (grated)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp dried basil

Instructions

  1. Heat olive oil and butter in a large deep skillet over medium heat.
  2. Add diced chicken and onion; cook until chicken is no longer pink and onions are tender (about 8-10 minutes).
  3. Stir in remaining ingredients—penne pasta, diced tomatoes, garlic, spinach, chicken broth, cream cheese, mozzarella—and bring to a low simmer.
  4. Cook for about 20 minutes or until pasta is al dente, stirring occasionally.
  5. Remove from heat and let sit for a few minutes before serving.
