  • 6 tbsp coconut aminos
  • 1 medjool date (pitted)
  • 1.5 bell pepper (diced)
  • 2 cups broccoli florets
  • 1 cup snow peas
  • 1 handful cabbage (roughly chopped)
  • 1.5 tbsp coconut oil

Instructions

  1. Blend together the sauce ingredients: coconut aminos, date, rice vinegar, garlic, ginger, sesame oil, chicken broth, and tapioca starch until smooth.
  2. Reserve some sauce for later and marinate chicken in the remaining mixture.
  3. Sauté chopped vegetables in coconut oil until crisp-tender, then set aside.
  4. In the same pan, sear the marinated chicken until golden brown.
  5. Combine chicken and vegetables in the pan with reserved sauce; cook for an additional two minutes to meld flavors.
