  • 1 lb boneless skinless chicken breast
  • 2 cups mushrooms (cut in half)
  • 1 clove garlic (minced)
  • 1 1/2 cups dry white grape juice
  • 1/2 cup heavy cream
  • 1/3 cup shredded asiago cheese
  • Fresh thyme (for garnish)

Instructions

  1. Pound the chicken breasts until they are uniformly 1/4 inch thick and cut into serving-sized pieces.
  2. In a large skillet, heat butter and olive oil over medium heat. Dredge chicken pieces in seasoned flour and sauté until golden brown on each side, about 5 minutes per side. Remove from skillet.
  3. Add remaining olive oil to the skillet, then sauté mushrooms and garlic until browned.
  4. Pour in white grape juice, deglazing the pan by scraping up browned bits. Add bruised thyme.
  5. Return chicken to the skillet, bring to a boil, reduce heat, cover, and simmer for 15-20 minutes.
  6. Remove chicken; stir in cream and asiago cheese until melted and sauce thickens. Return chicken to warm through before serving.
