- 2 cups mushrooms (cut in half)
- 1 clove garlic (minced)
- 1 1/2 cups dry white grape juice
- 1/2 cup heavy cream
- 1/3 cup shredded asiago cheese
- Fresh thyme (for garnish)
Instructions
- Pound the chicken breasts until they are uniformly 1/4 inch thick and cut into serving-sized pieces.
- In a large skillet, heat butter and olive oil over medium heat. Dredge chicken pieces in seasoned flour and sauté until golden brown on each side, about 5 minutes per side. Remove from skillet.
- Add remaining olive oil to the skillet, then sauté mushrooms and garlic until browned.
- Pour in white grape juice, deglazing the pan by scraping up browned bits. Add bruised thyme.
- Return chicken to the skillet, bring to a boil, reduce heat, cover, and simmer for 15-20 minutes.
