  • 2 tbsp olive oil
  • 2 tbsp lemon juice (plus zest for more lemon flavor)
  • 2 garlic cloves, minced
  • 2 tsp oregano
  • 1/2 tsp paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 8 whole wheat pitas
  • 1 cup Persian cucumbers, chopped
  • 1 cup cherry tomatoes, chopped
  • 1 cup red bell pepper, chopped
  • 1/4 cup red onion, diced
  • 2 tbsp parsley, chopped (or mint, basil, dill, etc)
  • 1/2 cup feta cheese, crumbled
  • 1 lemon, juice
  • Salt and pepper to taste
  • 1/2 cup tzatziki

Instructions

  1. Combine the olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper in a large non-reactive bowl. Add the chicken pieces and marinate for at least 15 minutes; ideally aim for 30–45 minutes for deeper flavor.
  2. In a separate bowl, combine cucumbers, cherry tomatoes, bell pepper, red onion, parsley (or your choice of herbs), feta cheese, lemon juice, salt, and pepper. Drizzle with olive oil if desired. Mix well and set aside.
  3. Heat a large skillet over medium-high heat. Once hot, add the marinated chicken pieces in a single layer. Cook for about 3–5 minutes until golden brown; they should release easily from the pan. Flip and cook for another 3–4 minutes until fully cooked through.
  4. Warm your pitas to ensure they are soft: Use a griddle with a touch of cooking spray or heat them directly on an open flame briefly.
  5. Top each warmed pita with a generous portion of cooked chicken, the prepared Mediterranean salsa, and a dollop of tzatziki sauce.
