  • ½ cup sun-dried tomatoes (chopped; oil-packed is best)
  • 1 cup coconut cream
  • ½ cup vegetable broth
  • ⅓ cup shredded vegetarian Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon ground black pepper
  • 1 teaspoon balsamic vinegar
  • ⅓ cup fresh basil (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss cauliflower, carrots, bell pepper, and red onion with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 25 minutes, stirring halfway through until golden and tender.
  4. In a large pan over medium heat, melt butter or olive oil and sauté garlic with red pepper flakes for 1 minute.
  5. Add sun-dried tomatoes, then stir in coconut cream and vegetable broth; simmer for 3 minutes.
  6. Mix in shredded vegetarian Parmesan cheese, Italian seasoning, more black pepper, and balsamic vinegar until smooth.
