  • ¾ cup gluten-free all-purpose flour mix
  • ¾ cup unsweetened almond milk
  • 1 tablespoon lemon pepper seasoning
  • 1 cup crispy gluten-free breadcrumbs
  • 8½ tablespoons lemon juice
  • 4½ tablespoons maple syrup or agave nectar
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon freshly grated lemon zest
  • 1 teaspoon cornstarch + 1 teaspoon water
  • Chopped parsley (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C). Cut the cauliflower into bite-sized florets.
  2. In a bowl, whisk together gluten-free flour mix, almond milk, and lemon pepper seasoning until smooth.
  3. Coat cauliflower florets in the batter and place them on a baking sheet lined with parchment paper.
  4. Sprinkle crispy breadcrumbs over each floret, pressing gently to adhere.
  5. Bake for about 20 minutes until golden brown and crispy, flipping halfway through.
  6. In a saucepan over low heat, combine lemon juice, maple syrup/agave nectar, black pepper, grated lemon zest, and cornstarch slurry until thickened.
  7. Toss baked cauliflower wings in the sauce before serving.
