  • 2 cups sugar
  • 2 tablespoons lemon zest
  • 2 large eggs (room temperature)
  • 3 cups all-purpose flour
  • 1 cup lemon juice
  • 1¼ cup sugar (for curd)
  • 1½ tablespoon corn starch
  • 2 tablespoons lemon zest (for curd)
  • 1/4 cup butter (cold and cubed)

Instructions

  1. Begin by making the lemon curd: In a saucepan, combine lemon juice, egg yolks, sugar, corn starch, and lemon zest over low heat. Stir until thickened, then remove from heat and stir in cold cubed butter until melted. Cool completely.
  2. Preheat your oven to 350°F (175°C). Cream together room temperature butter and sugar until fluffy. Add lemon zest and eggs one at a time, mixing well after each addition.
  3. Stir in flour along with baking powder and baking soda until just combined.
  4. Scoop tablespoon-sized portions onto a lined baking sheet; create an indentation in each ball and fill with cooled lemon curd.
  5. Bake for about 10 minutes or until edges are lightly golden. Allow to cool before serving.
