  • 2 tbsp olive oil
  • 1 large onion, diced
  • 2 large bell peppers, diced
  • 4 cloves garlic, minced
  • 1 medium head cauliflower, cut into florets
  • 2 cups green beans, trimmed and cut
  • 2 cans (14.5 oz) diced tomatoes
  • 8 cups chicken broth (or vegetable broth)
  • 1 tbsp Italian seasoning
  • Sea salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the diced onions and bell peppers for about 7 to 10 minutes until softened.
  3. Add the minced garlic and sauté for an additional minute.
  4. Stir in the cauliflower, green beans, diced tomatoes, chicken broth, and Italian seasoning. Season to taste with salt and pepper.
  5. Bring to a boil, then cover and reduce heat to medium-low. Cook for 10 to 20 minutes until veggies are tender.
