Description

  • 6 1/4 cups bread flour
  • 2 teaspoons instant dry yeast
  • 2 cups warm water (105°F – 115°F)
  • 1 tablespoon granulated sugar
  • 1/2 cup plus 2 tablespoons extra virgin olive oil
  • 4 teaspoons fine sea salt
  • 1/4 cup room temperature water (for topping)
  • 7 ounces gruyère cheese (sliced into small cubes)
  • 2 tablespoons fresh thyme leaves
  • 2 teaspoons Maldon sea salt flakes

Instructions

  1. In a large mixing bowl, combine warm water, sugar, and yeast. Stir until dissolved and let sit for about 5 minutes until frothy.
  2. Add bread flour and fine sea salt; mix until a shaggy dough forms.
  3. Knead on a floured surface for about 8–10 minutes until smooth, then place in a greased bowl. Cover with a kitchen towel.
  4. Let rise in a warm area for about 2 hours or until doubled in size.
  5. Preheat oven to 425°F (220°C). Grease a baking sheet with olive oil.
  6. Punch down the dough and press it into an even rectangle on the prepared sheet.
  7. Drizzle remaining olive oil over the top, create dimples with fingers, then evenly distribute gruyère cheese, thyme leaves, and Maldon sea salt flakes.
  8. Cover again and let rise for another hour.
  9. Bake for about 25–30 minutes until golden brown. Allow to cool slightly before slicing.
