  • 1 1/2 lbs chicken thighs
  • 4 tablespoons olive oil (divided)
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 large onion (peeled, quartered and thinly sliced)
  • 1 1/2 cups long grain rice
  • 2 1/2 cups chicken broth
  • 1/3 cup heavy cream
  • 4 cups fresh spinach (uncooked)

Instructions

  1. In a mixing bowl, combine chicken thighs with garlic powder, onion powder, oregano, salt, pepper, and 1 tablespoon olive oil. Set aside.
  2. Heat two tablespoons of olive oil in a large skillet over medium heat. Add sliced onions and cook until golden brown and caramelized (about 15 minutes), stirring frequently. Remove from pan.
  3. In the same skillet, sear marinated chicken pieces for about 2-3 minutes on each side until browned but not fully cooked. Remove and set aside.
  4. Add remaining olive oil to the skillet along with uncooked rice. Stir for one minute before adding chicken broth, heavy cream, caramelized onions, and fresh spinach. Place chicken on top and reduce heat to low. Cover and cook for about 20-25 minutes until rice is tender.
  5. Serve immediately with optional garnishes like fresh herbs or lemon juice.
