  • 1 pound Boneless chicken (Cut into 1 inch cubes)
  • 1 tsp Garlic (Finely minced)
  • 1 tsp Ginger (Finely minced)
  • 1/2 cup Onions (Cut into 1 inch squares)
  • 1/2 cup Green pepper (Cut into 1 inch squares)
  • 1 cup Pineapple (Fresh or canned, Cut into small 1 inch pieces)
  • 3/4 cup Pineapple juice
  • 1/4 cup Soy sauce (Low sodium)
  • 1/3 cup Chicken broth (Low sodium)
  • 1/4 cup Hoisin sauce
  • 1/4 cup Brown sugar
  • 2 tsp Cornstarch
  • Salt (To taste)
  • Pepper (To taste)
  • 1.5 tsp Red chili flakes (For garnish)

Instructions

  1. Heat oil in a non-stick pan over medium-high heat. Add cubed chicken and sauté until golden brown, about 5–7 minutes.
  2. Stir in minced garlic, ginger, onions, green peppers, and pineapple; cook for an additional 4 minutes until vegetables are tender.
  3. In a bowl, mix together pineapple juice, soy sauce, hoisin sauce, and dissolved cornstarch with water; pour into the pan.
  4. Allow the mixture to simmer until the sauce thickens, stirring occasionally.
  5. Garnish with red chili flakes before serving.
