  2. In a large bowl, mix together quark, spelt flour, and baking powder until combined. Adjust the consistency by adding more flour or quark if needed.
  3. Divide the dough into equal pieces and shape each into a long strand before connecting the ends to form rings. Leave the center hole larger as it will shrink during baking.
  4. Place the bagels on a lined baking sheet and sprinkle with sesame and poppy seeds, pressing them lightly into the dough.
