  • 1 1/2 lb boneless skinless chicken breast
  • 1/2 cup chicken broth
  • 1 pkg dry ranch dressing mix
  • 8 oz cream cheese (cubed)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 2 cups chopped spinach
  • 1 lb rotini pasta

Instructions

  1. Season chicken breasts with black pepper and place them in the slow cooker. Pour chicken broth over the top.
  2. Sprinkle ranch dressing mix on the chicken, then add cubed cream cheese.
  3. Cover and cook on low for 5-6 hours or high for 3-4 hours.
  4. Once cooked, remove the chicken, then stir in cheddar cheese, heavy cream, and spinach into the crock pot.
  5. Chop or shred the chicken before returning it to the slow cooker; cook for an additional 30 minutes.
  6. Prepare rotini pasta according to package instructions until al dente.
  7. Mix drained pasta into the chicken mixture until well combined. Serve hot.
