  • 1 lb fresh skinless salmon fillets
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha (adjust to taste)
  • 1 tbsp honey
  • 1 tbsp lime juice

Instructions

  1. Cut the salmon into 1-inch cubes and pat dry.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with panko mixed with garlic powder, onion powder, paprika, salt, and pepper.
  3. Dredge each salmon cube in flour, dip in egg, then coat in the panko mixture.
  4. Heat vegetable oil in a skillet over medium heat (about 350°F). Fry the salmon bites for 2-3 minutes on each side until golden brown.
  5. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, and lime juice to create the bang bang sauce.
  6. Serve immediately with the sauce drizzled on top or on the side.
