- 12 oz. fettuccine
- 1 lb. sirloin steak
- 2 tbsp. vegetable oil
- 2 tbsp. butter
- 2 cloves garlic, minced
- 2 tbsp. all-purpose flour
- 2 cups milk
- ½ cup freshly grated Parmesan cheese
- 1½ cups halved cherry tomatoes
- 4 cups baby spinach
- balsamic glaze (from simmering balsamic vinegar)
Instructions
- Cook fettuccine in salted boiling water until al dente; reserve ½ cup pasta water before draining.
- Season steak with oil, salt, and pepper; cook in a skillet until medium-rare (about 4 minutes per side). Rest before slicing.
- In the same skillet, melt butter and sauté garlic; whisk in flour and then slowly add milk to thicken.
- Stir in Parmesan and cherry tomatoes until soft; add cooked fettuccine and toss with spinach until wilted.
