  • 2 boneless, skinless chicken breasts
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 cup heavy cream (or half & half)
  • 1/2 cup shredded Mexican cheese blend
  • 1 (10-15 ounce) can diced tomatoes & green chilies
  • Fresh cilantro for garnish

Instructions

  1. Cook the penne pasta according to package directions until al dente; set aside.
  2. Dry the chicken with a paper towel and sprinkle taco seasoning on both sides.
  3. Heat olive oil in a large skillet over medium-high heat, then cook the chicken for about 5 minutes per side until fully cooked. Remove, cover with foil, and slice when cool.
  4. In the same skillet, melt butter over medium heat. Whisk in heavy cream and cook for 2 minutes.
  5. Stir in cheese and diced tomatoes until thickened. Mix in cooked pasta, add sliced chicken on top, and garnish with cilantro before serving.
