- ½ tablespoon butter
- ½ tablespoon olive oil
- 1 teaspoon minced garlic
- 2 x 400g tins butter beans, drained
- 175 ml vegetable stock
- Few sprigs fresh rosemary
- 75 ml single cream
- 50 g grated vegetarian parmesan-style cheese
- Black pepper
Instructions
- Prepare the leek by trimming and washing it thoroughly. Slice it into thin pieces.
- In a large frying pan, heat the butter and olive oil over medium heat. Add the sliced leek and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for another couple of minutes.
- Add the drained butter beans and vegetable stock to the pan, along with whole sprigs of rosemary. Cover and simmer for about 10 minutes until everything is heated through.
- Stir in the cream, grated cheese, and season with black pepper. Allow to simmer gently for a few more minutes until the cheese is fully melted.
- Remove any rosemary sprigs before serving warm as either a main dish or side.
