- 1 pound boneless skinless chicken breasts (cubed)
- 1 Tablespoon oil
- Salt & Pepper
- ½ cup finely chopped onion
- 3 cloves garlic (minced)
- 8 oz mushrooms (sliced)
- 1 ½ cups uncooked wild rice blend
- 4 ¼ cups chicken broth
- ¼ cup butter
- 3 Tablespoons flour
- 1 cup milk
- ½ teaspoon dried thyme
Instructions
- Preheat your oven to 400º F.
- In a pot, bring chicken broth to a boil. Add wild rice and cook according to package instructions.
- Heat oil in a skillet over medium-high heat. Season cubed chicken with salt and pepper, then brown for about 2-3 minutes per side. Remove and set aside.
- In the same skillet, sauté mushrooms, onion, and garlic for about 5-7 minutes until softened. Set aside.
- Melt butter in the skillet, stir in flour until golden. Gradually whisk in milk, add thyme and seasonings; cook until thickened.
- In a casserole dish, combine cooked wild rice, chicken, sautéed vegetables, and creamy sauce; mix until well coated.
- Bake for approximately 20 minutes or until hot and bubbly.
