  • 1 pound boneless skinless chicken breasts (cubed)
  • 1 Tablespoon oil
  • Salt & Pepper
  • ½ cup finely chopped onion
  • 3 cloves garlic (minced)
  • 8 oz mushrooms (sliced)
  • 1 ½ cups uncooked wild rice blend
  • 4 ¼ cups chicken broth
  • ¼ cup butter
  • 3 Tablespoons flour
  • 1 cup milk
  • ½ teaspoon dried thyme

Instructions

  1. Preheat your oven to 400º F.
  2. In a pot, bring chicken broth to a boil. Add wild rice and cook according to package instructions.
  3. Heat oil in a skillet over medium-high heat. Season cubed chicken with salt and pepper, then brown for about 2-3 minutes per side. Remove and set aside.
  4. In the same skillet, sauté mushrooms, onion, and garlic for about 5-7 minutes until softened. Set aside.
  5. Melt butter in the skillet, stir in flour until golden. Gradually whisk in milk, add thyme and seasonings; cook until thickened.
  6. In a casserole dish, combine cooked wild rice, chicken, sautéed vegetables, and creamy sauce; mix until well coated.
  7. Bake for approximately 20 minutes or until hot and bubbly.
