  • 1 large rotisserie chicken, pulled meat (about 56 cups)
  • 1/2 pound deli-style black forest chicken, chopped
  • 1/2 pound Swiss cheese, sliced
  • 4 Tb butter
  • 2 garlic cloves, minced
  • 4 Tb flour
  • 3 C milk
  • 2 Tb lemon juice
  • 1 Tb Dijon mustard
  • 1 1/2 tsp salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp pepper
  • 4 Tb melted butter
  • 1 1/4 C seasoned bread crumbs
  • 1/4 C grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a 9×13 casserole dish with nonstick spray.
  2. Layer pulled chicken at the bottom of the dish, followed by chopped black forest chicken and Swiss cheese.
  3. In a medium saucepan, melt butter over medium heat, add minced garlic, and stir until fragrant.
  4. Stir in flour, then gradually whisk in milk until the mixture thickens and bubbles.
  5. Add Dijon mustard and seasonings to the sauce; pour evenly over layered ingredients in the casserole.
  6. Combine melted butter with breadcrumbs and Parmesan cheese; sprinkle over the top of the casserole.
  7. Bake for 45 minutes, allowing it to cool for 10 minutes before serving.
