  • 1 medium yellow onion (diced)
  • 1 medium green bell pepper (diced)
  • 2 stalks celery (diced)
  • 3 cloves garlic (minced)
  • 1 pound smoked sausage (sliced)
  • 2 pounds russet potatoes (peeled and diced)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons Cajun seasoning

Instructions

  1. In a large pot or Dutch oven, melt butter over medium heat. Add onion, bell pepper, and celery; sauté for about 5-7 minutes until softened. Stir in garlic and cook for another minute.
  2. Add the sliced smoked sausage to the pot, cooking until browned for about 5 minutes.
  3. Sprinkle flour over the mixture; stir continuously for about 2 minutes. Mix in Cajun seasoning.
  4. Add diced potatoes and pour in chicken broth while scraping up any browned bits from the bottom of the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until potatoes are tender.
  5. For a creamier texture, use an immersion blender to puree part of the soup directly in the pot or blend removed portions separately before returning them.
  6. Stir in heavy cream; taste and adjust seasoning if needed. Simmer uncovered for another 5 minutes before serving.
