Ingredients

  • 2 tsp Olive oil
  • 500 g Chicken breasts (Skinless and boneless, cut into chunks)
  • 3 tbsp Cajun spice mix
  • 1 Onion
  • 3 Cloves of garlic
  • 2 Green peppers (large, deseeded and chopped)
  • 3 Sticks of celery (trimmed and cut into small pieces)
  • 250 g Dried pasta
  • 750 ml Vegetable stock
  • 400 g Tin of tomatoes
  • Salt and freshly ground black pepper
  • 100 g Cream cheese
  • Basil to garnish (Optional)

Instructions

  1. Heat olive oil in a large deep frying pan over medium heat. Add chicken chunks seasoned with half of the Cajun spice mix. Cook for 5 minutes until starting to brown.
  2. Stir in diced onions, minced garlic, chopped green peppers, celery, and remaining Cajun spice mix. Sauté for another 5-10 minutes until vegetables are softened.
  3. Add dried pasta, vegetable stock, canned tomatoes, salt, and pepper. Stir well, cover with a lid, and cook according to pasta package instructions (10-13 minutes).
  4. Once the pasta is al dente, remove from heat and stir in cream cheese until well combined.
