  • 1 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 5 Tablespoons unsalted butter
  • 3/4 cup light brown sugar
  • 1 teaspoon cinnamon
  • 2 Tablespoon cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 Tablespoons unsalted butter
  • 2 1/2 Tablespoon milk

Instructions

  1. In a stand mixer, beat room temperature unsalted butter, granulated sugar, and light brown sugar until creamy.
  2. Add eggs and vanilla extract; mix until fluffy.
  3. In another bowl, combine cake flour, cornstarch, baking soda, baking powder, and salt. Gradually add to the wet mixture while mixing.
  4. Chill the dough for one hour.
  5. Preheat the oven to 350°F (175°C). Prepare your filling by mixing unsalted butter, light brown sugar, cinnamon, and cake flour until smooth.
  6. Scoop chilled dough (about 1/4 cup) and create wells to fill with the mixture. Seal with another half of dough.
  7. Bake for 11–13 minutes until edges are golden.
