  • 1/2 lb malfadine pasta (8 oz)
  • 2 tbsp olive oil
  • 1 medium onion (finely diced)
  • 4 cups shaved broccoli (about 1 head)
  • 2 packages (5.2 oz each) Boursin garlic & herb cheese
  • 1/2 lemon (juiced)
  • Salt and pepper to taste
  • 1 tbsp salted butter

Instructions

  1. Boil salted water in a large pot and cook malfadine pasta according to package instructions. Reserve at least 1 cup of pasta water before draining.
  2. In a large pan over medium-high heat, add olive oil and sauté the diced onion with salt and red pepper flakes until soft.
  3. Add shaved broccoli to the pan, cooking for about 2 minutes until slightly tender.
  4. Stir in salted butter until melted, then add Boursin cheese and reserved pasta water (about 3/4 cup) to create a creamy sauce.
  5. Combine the drained pasta with the sauce in the pan, stirring gently over low heat for about 1-2 minutes.
  6. Finish by squeezing half a lemon over the dish and adding extra red pepper flakes if desired before serving.
