- 4 eggs
- 4 tbsp sweetener of choice
- 2 tsp vanilla extract
- 2 tbsp cornstarch
- 1 tsp lemon zest
- 1½ cups fresh blueberries (divided)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 baking dish.
- Strain the cottage cheese for 2–3 minutes to remove excess liquid.
- Blend the strained cottage cheese, eggs, sweetener, vanilla extract, and cornstarch until smooth.
- Check the texture; if grainy, blend again for another 15 seconds or add 1 tsp milk if too thick.
- Gently fold in the blueberries and lemon zest.
- Pour the mixture into the prepared dish, spreading evenly and tapping to remove air bubbles.
- Bake for 35–40 minutes until edges are set and a toothpick comes out mostly clean.
- Cool for 10–15 minutes before slicing and serve with extra blueberries if desired.
