  • 1 pound beef (thinly sliced)
  • 1/4 cup extra virgin olive oil
  • 1/2 cup lime juice
  • 3 cloves garlic (minced)
  • 4 cups cauliflower rice
  • 3 sweet peppers (sliced)
  • 1 onion (sliced)
  • Avocado (for serving)
  • Fresh cilantro (optional garnish)

Instructions

  1. In a mixing bowl, whisk together olive oil, lime juice, minced garlic, Swerve Brown Sugar Substitute, chili powder, cumin, red pepper flakes, salt, smoked paprika, oregano, and cilantro.
  2. Marinate the thinly sliced beef in the mixture for at least 30 minutes.
  3. In a skillet over medium heat with olive oil, sauté cauliflower rice for about 5–7 minutes until tender.
  4. In another skillet over medium-high heat, cook the marinated beef for about 5–7 minutes until browned; then add sliced peppers and onion and cook until softened (about 5 minutes).
  5. Serve the beef and veggies over cauliflower rice and garnish with avocado slices and fresh cilantro if desired.
