  • 2 tablespoons vegetable oil
  • 2 boneless, skinless chicken breast halves
  • 1 red onion, chopped
  • 1/2 jalapeno pepper, minced
  • 1 pound small pasta shells
  • 1 cup BBQ sauce
  • 1 cup mayonnaise
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground pepper
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 cup corn
  • 15-ounce can black beans, rinsed and drained
  • 1/4 cup fresh cilantro

Instructions

  1. In a large skillet over medium-high heat, add vegetable oil. Cook chicken for 4-6 minutes on each side until fully cooked. Remove from skillet and chop into bite-sized pieces.
  2. In the same skillet, sauté chopped onions and minced jalapenos for 2-3 minutes until softened.
  3. Boil water in a large pot according to package instructions; cook pasta one minute shy of the recommended time. Drain and rinse under cold water.
  4. In a mixing bowl, combine BBQ sauce, mayonnaise, kosher salt, and pepper until smooth.
  5. Add chopped chicken to the bowl along with sautéed vegetables, diced bell peppers, corn, black beans, and cilantro. Toss well to combine.
