Ingredients

  • 1 1/2 cups cooked rice (preferably day-old)
  • 1 chicken breast, diced
  • 2 eggs, beaten
  • 1/2 cup diced carrots
  • 1/3 cup green peas
  • 2 cloves garlic, minced
  • 2 green onions, sliced (for garnish)
  • 2 to 3 tablespoons soy sauce
  • 1 tablespoon oil (plus more as needed)
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon rice vinegar

Instructions

  1. Prepare the Bang Bang sauce by mixing mayonnaise, sweet chili sauce, Sriracha, and rice vinegar in a small bowl.
  2. Heat oil in a large skillet or wok over medium-high heat. Cook diced chicken until browned and cooked through. Set aside.
  3. Scramble the eggs in the same skillet until just set; remove from the pan.
  4. Sauté diced carrots and minced garlic until softened, then add green peas.
  5. Add cold rice to the pan, stir-frying for 3–4 minutes until slightly crispy.
  6. Return chicken and scrambled eggs to the skillet; add soy sauce and mix well.
  7. Pour in the Bang Bang sauce, stirring until all ingredients are coated and heated through.
  8. Garnish with sliced green onions before serving.
