- 1 1/2 cups cooked rice (preferably day-old)
- 1 chicken breast, diced
- 2 eggs, beaten
- 1/2 cup diced carrots
- 1/3 cup green peas
- 2 cloves garlic, minced
- 2 green onions, sliced (for garnish)
- 2 to 3 tablespoons soy sauce
- 1 tablespoon oil (plus more as needed)
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon Sriracha (adjust to taste)
- 1 teaspoon rice vinegar
Instructions
- Prepare the Bang Bang sauce by mixing mayonnaise, sweet chili sauce, Sriracha, and rice vinegar in a small bowl.
- Heat oil in a large skillet or wok over medium-high heat. Cook diced chicken until browned and cooked through. Set aside.
- Scramble the eggs in the same skillet until just set; remove from the pan.
- Sauté diced carrots and minced garlic until softened, then add green peas.
- Add cold rice to the pan, stir-frying for 3–4 minutes until slightly crispy.
- Return chicken and scrambled eggs to the skillet; add soy sauce and mix well.
- Pour in the Bang Bang sauce, stirring until all ingredients are coated and heated through.
- Garnish with sliced green onions before serving.
