  • 8 ounces dried pasta (spaghetti or your choice)
  • 1 pound shrimp (peeled and deveined)
  • 4 garlic cloves (minced)
  • 1 large shallot (thinly sliced)
  • 1 teaspoon crushed red pepper flakes (optional)
  • ½ teaspoon smoked paprika
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter (melted)
  • ½ cup dry white grape juice
  • Zest and juice of 1 medium lemon
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley leaves (chopped)
  • ½ cup grated parmesan cheese

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Cook pasta according to package instructions until al dente; drain and set aside.
  3. In a baking dish, combine garlic, shallots, red pepper flakes, paprika, olive oil, melted butter, grape juice, lemon zest and juice, salt, pepper, parsley, and shrimp. Mix well.
  4. Bake for about 12 minutes or until shrimp are pink and cooked through.
  5. Stir in the drained pasta until evenly coated with the sauce.
  6. Sprinkle with parmesan cheese and mix gently.
  7. Serve hot with extra parsley or cheese as desired.
