- 200g block of feta cheese
- 300g baby plum or cherry tomatoes
- 200g asparagus
- 2 cups uncooked orzo
- 100g baby spinach
- Fresh basil
- Chives
- 60g mascarpone
- Olive oil
Instructions
- Preheat the oven to 200°C (390°F). In a large oven-safe pan, place the feta and drizzle with olive oil. Bake for 8 minutes until softened.
- Add halved tomatoes and chopped asparagus around the feta. Drizzle with more olive oil and bake for an additional 12-15 minutes until golden.
- While baking, cook orzo in salted boiling water until al dente. Drain and reserve some starchy water.
- Mash the baked feta with a fork and mix in the cooked orzo. Stir in baby spinach and reserved starchy water until creamy.
- Finish with chopped basil, chives, mascarpone, and season with salt and pepper before serving.
