  • 3 cups green cabbage, shredded
  • 3 cups red cabbage, shredded
  • 2 large carrots, julienned
  • 3 cups bean sprouts
  • 3 green onions, sliced
  • 1/2 cup fresh coriander leaves
  • 1/2 cup mint leaves
  • 3 tbsp rice vinegar
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 3 tbsp peanut oil
  • 1 1/2 tbsp sugar
  • 2 garlic cloves, minced
  • 3 cups shredded cooked chicken (optional)

Instructions

  1. To make the dressing, combine rice vinegar, soy sauce, lime juice, peanut oil, and sugar in a jar. Shake well until mixed.
  2. In a large bowl, combine shredded green cabbage, red cabbage, julienned carrots, bean sprouts, sliced green onions, coriander leaves, and mint leaves.
  3. Pour the dressing over the salad and toss gently until everything is coated.
  4. Serve immediately or let it chill for about 30 minutes to enhance flavors.
